Winemaking
Fruit from exceptional parcels across the estate were fermented and aged separately, giving the winemaker an enticing range of flavors and textures to work with. The juice was fermented on the skins in small, stainless steel tanks. Punch downs and déléstages (rack-and-return fermentation) were tailored to each must to achieve the best extraction and texture. To round out the wine while maintaining optimal acidity and freshness, all of the juice underwent secondary malolactic fermentation, half in stainless steel and half in French oak.Vintage
