Winemaking
To extract maximum color and flavor, immediately after they were harvested, the grapes were macerated on the skins for 15 days at controlled temperatures of 80–82°F. Malolactic fermentation in botti (large, neutral barrels) followed to round out the wine while retaining its natural acidity and freshness.Vintage
