Tasting Notes

The 2022 St Huberts The Stag Central Coast Chardonnay is classic in style with hints of subtle oak. This wine is fresh and bright with vibrant aromas of lemon zest and vanilla spice. The palate is crisp and refreshing with a core of racy acidity and a bounty of juicy fruit flavors, including Golden Delicious apple, cantaloupe melon, and citrus blossom, accompanied by more nuanced notes of vanilla, allspice, and brioche toast on the mid-palate, from the well-integrated oak. With a medium body and luscious, creamy texture, the wine has a lasting finish, making it the perfect accompaniment to a variety of cuisines and dishes.

Scores & Accolades

“A very solid Chardonnay in relation to its price, this is medium-bodied but quite expressive in aroma and flavor. Spicy, toasty scents get it off to a good start, and fruit notes of peaches and baked apples finish with just a touch of sweetness balanced by a little tug of wood tannin.”—Michael Franz Tasting Panel Magazine, January 2025

Winemaking

Using a modern approach to winemaking, this Chardonnay was crafted with minimal intervention to reflect the unique terroir of the Central Coast. Oak fermentation, sur lie aging (on the lees) along with French oak and full malolactic fermentation allow for a layered and balanced expression of this vineyard-driven Chardonnay.

Vintage

The 2022 season on the Central Coast was a more moderate growing season with the Chardonnay ripening in mid-September. The continuing drought conditions produced berries that were smaller and more concentrated than in previous years, which helped to craft the perfect fruit for winemaking. The yield was slightly lower as well, but flavors were bright and bold, with strong color and vibrant acidity.

Vineyard

The Central Coast’s lengthy growing season and coastal climate make the appellation a perfect place to grow balanced and concentrated Chardonnay fruit. The inland valley vineyards provide generous sunshine to ripen grapes to full maturity, but the cool diurnal influence of the Pacific Ocean moderates the heat, creating sunny hot days and cool refreshing nights.
