Tasting Notes

The 2022 St Huberts The Stag Paso Robles Cabernet Sauvignon is plusher and richer than previous vintages, displaying a dark burgundy hue and expressive aromas. Notes of caramel and baking spices from the oak influence intertwine with pronounced ripe red berries on the nose. The palate presents velvety-rich tannins complemented by a strong core of dark blackberry, black raspberry, and Damson plum. Winemaking

Using a modern approach, the grapes were crushed and fermented an average of seven to 10 days in stainless steel tanks. Pump-overs were gently performed three times a day to extract optimum color and tannin. Post fermentation, a portion of the wine was integrated with French and American oak for up to two years to smooth and round the tannins and to add complexity and depth of flavor. Finally, each of the lots were tasted daily to determine exactly which would be selected for the final wine.

Vintage

In the Paso Robles region, 2022 was a more moderate growing season. The grapes ripened in normal progression until a heat spell near Labor Day encouraged faster ripening. This created perfect picking conditions in early October. The yield was comparable to typical vintages and the wine will be known for its richness, complexity, and bright acidity -- another wonderful vintage in Paso Robles.

Vineyard

Paso Robles is located between San Francisco and Los Angeles along California’s Central Coast. The region enjoys a greater day-to-night temperature swing than any other appellation in California. There is great diversity in the region, distinct microclimates, over 45 different soil types, and a long growing season. This makes Paso Robles an ideal place for producing premium wines, in particular Bordeaux varietals like Cabernet Sauvignon. This diversity also gives St Huberts The Stag the opportunity to select the ideal fruit to make this rich, structured, and refined wine.
